Our Story

At the heart of San Juan Eatery are two people with a love for good food and even bigger hearts for animals. Amanda Jones and Eddie Tobin, longtime residents of Pagosa Springs, have always believed in the power of community—whether it’s serving up hearty Southern comfort food or lending a helping hand to those in need.

Their journey began in their cozy local restaurant, where they built lasting relationships with customers who quickly became family. But beyond the hustle of running a successful eatery, Amanda and Eddie found a new calling—helping animals in need. Through their involvement with Rugby’s Rescue, a local animal rescue, they discovered a shared passion for rehabilitating animals and finding them their FUR-ever homes.

When they’re not serving plates piled high with soul-warming dishes, you’ll find Amanda and Eddie welcoming fosters into their own home through Rugby’s Rescue. They devote their time to walking dogs, nursing animals back to health, and sharing their time, energy, and love to give these furry friends a second chance. From foster care to adoption drives, they’ve devoted their free time to making a difference, one wagging tail and happy bark at a time.

San Juan Eatery is a reflection of Amanda and Eddie’s mission to nourish both people and animals. With every meal served, they’re not just filling plates—they’re giving back. A portion of every dish supports local rescues, helping animals find loving families and brighter futures.

Meet The Team

Amanda Jones

Owner

Hello! I’m Amanda, the Owner and Operator of San Juan Eatery. I’ve
been part of the restaurant industry in Pagosa Springs for over 10 years.
Recently, my team and I decided to embark on an exciting new adventure
by creating San Juan Eatery—a place that blends my love for food with
my passion for animals. For those who don’t know me yet, I’m a big animal lover. My husband, Eddie, our son, Nick, and I live on a small ranch filled with dogs,
horses, cats, goats, and chickens. I have a deep passion for rescue work, and we actively foster animals through LASSO Horse Rescue and Rugby’s Rescue, a local nonprofit dog rescue organization.
You might notice that some of our menu items have playful names—these are inspired by our own rescued animals at
home. Since we can’t bring our furry family to work, we thought naming menu items after them would be a
wonderful way to celebrate them and share their stories with you.

Eddie Tobin

Head Chef

I’m Eddie Tobin, co-owner and head chef at San Juan Eatery, and I’ve been lucky to call Pagosa Springs home for over a decade. Cooking has always been my passion, and I love bringing the rich, hearty flavors of Southern comfort food to the Rocky Mountains. There’s nothing better than seeing people gather around a table, enjoying good food and great company.

When I’m not in the kitchen, you can usually find me working in the outdoor industry—exploring the beauty that makes Pagosa such a special place to live. But one of the things closest to my heart is the work my wife Amanda and I do with animal rescues. We’ve opened our home to countless animals over the years, helping them heal and find their forever families. It’s something that brings just as much joy as cooking a perfect meal.

At San Juan Eatery, we believe in more than just great food—we believe in community, compassion, and giving back. Every plate we serve is part of that bigger picture, and I’m grateful to share it with each and every one of you.
